A side dish for meat doesn't have to be just grilled vegetables – you can bake bread right over the fire, too. We wrap unleavened dough with lard and herbs around a prepared stick and cook it briefly over hot coals. The warm rolls taste great as a side for meat, but also on their own, perhaps with butter.
Mix the flour with the salt, then gradually add the baking powder, chopped herbs, melted lard and water. Work the dough with your hands until smooth and leave it to rest for about 15 minutes.
Meanwhile, prepare long straight sticks, sharpen their tips, and clean the metal grilling forks if needed.
Take a piece of the rested dough and roll it between your palms into a long cylinder. Wind it around the stick so that it overlaps slightly and the ends are secured.
Bake the rolls on the stick over hot coals for about 20 minutes until crisp.
