Strawberries and baby spinach go surprisingly well together. The strawberries bring a sweet fragrance and a slightly tart flavour, which is beautifully complemented by the delicate spinach and a sharp dressing. The recipe was sent to us by our reader Diana Sejka, who as a vegetarian is always looking for new combinations.
Hull the strawberries and cut them into bite-sized pieces (halve smaller and medium berries only).
Put all the dressing ingredients into a larger bowl and whisk thoroughly until the sugar dissolves completely.
Add the strawberries, spinach leaves and spring onions to the bowl with the dressing and toss to combine. Toss the salad with the dressing just before serving – delicate spinach leaves tend to wilt quickly once mixed.
