Parasol mushrooms are a real delicacy and one of the best finds in the forest. If you manage to pick enough of them, try this simple recipe. The caps are filled with a fragrant cheese and herb stuffing, coated in breadcrumbs and gently fried. The result is a crispy treat you will enjoy.
Clean the mushrooms and remove the stalks so that the caps form little bowls for the filling.
Make the filling: grate the cheese, add the spices (marjoram, oregano, caraway), the crushed garlic and salt, then add the chopped parsley and the egg. Mix everything together and finally thicken the filling with breadcrumbs so that it holds in the caps.
Coat the stuffed caps in the three-part coating (flour, egg, breadcrumbs) and fry them in oil, a little more slowly.
