The tender dough made with all-purpose flour, Hera and yeast is easy to shape, so even complete beginners can manage it. We fill the crescents with homemade vanilla custard and bake them until golden. One batch makes 48 pieces and they are perfect for a festive table or with an afternoon coffee.
First, cook the custard according to the packet instructions and leave it to cool completely.
Meanwhile, make the yeast starter: tip the flour into a bowl, make a well in the centre, crumble in the yeast, add the sugar and milk and leave the starter to rise.
Add the softened Hera, egg and salt to the flour and starter and work into a smooth dough, then divide it into 6 pieces.
Roll out each piece into a flat round and cut it into eighths with a pastry wheel.
Put a little custard on each eighth and roll it up into a crescent.
Arrange the crescents on a baking tray lined with baking paper and bake in a preheated oven at 180 °C for about 20–25 minutes.
