Drain 400 g sauerkraut, chop it into medium-sized pieces, put it in a pot, pour over about 2 litres of water and cook until tender.
Cut 5 medium potatoes (about 280 g) into small cubes, put them in another pot, cover with water, add salt and caraway seeds and cook for 20 minutes until tender.
Make a light roux from 100 g butter and 120 g plain flour, stir it into the pot with the tender sauerkraut and boil together for a while.
Add the cooked potatoes, 1 chopped onion and slices of fried sausage to the mixture, finally pour over 1/4 litre of milk and bring to the boil again.
Stir 100 g sour cream into the finished soup and season with mixed peppercorns. Serve the sauerkraut soup garnished with parsley. Mmm, delicious!
