Tvarohové kremrole (Czech Curd Cheese Cream Rolls) with Lemon Snow

Think kremrole only belong in a pastry shop and could never work at home? With this recipe they are easy. We will show you how to roll out and slice the curd cheese dough, how to wind the strips onto metal tubes and bake them golden. Then fill them with fresh lemon snow, or serve them the classic way with homemade whipped cream.

Method

Mix the flour, softened butter, quark, egg yolks, a pinch of salt and the vanilla sugar into a smooth dough and leave it to rest until the next day.

The next day, roll out the dough, brush it with beaten egg and cut it into 2.5 cm wide strips with a pastry wheel. Wind the strips onto oil-greased metal tubes, with the egg-brushed side facing up. The dough will make about 12 kremrole.

Bake the kremrole in an oven preheated to 180 °C for 12–14 minutes.

Slide the baked and cooled kremrole off the tubes and fill them with the whipped egg white for baking desserts, to which you have added 1 tbsp of lemon juice.
