Do you like hot and spicy food? This warm Mexican salad with minced meat by Marcel Ihnačák is just the thing. Garlic and fresh herbs flavour the meat, the vegetables are stir-fried in a wok and everything is finished with lemon juice. You can find the recipe on kuchynelidlu.cz.
Finely chop the garlic and fresh herbs and mix them in a bowl with the minced meat. Season with salt and pepper and mix thoroughly. Using your hands, shape the mixture into small meatballs and place them on a baking tray lined with baking paper. Drizzle the meatballs with olive oil and bake in an oven preheated to 220 °C for about 5 minutes.
Cook the potatoes in their skins until almost tender, then peel and cut into quarters. Cut the washed white part of the leek into larger pieces and slice the peppers into strips. Heat the olive oil in a wok and stir-fry the bell pepper strips. Season with salt and pepper, and after about 3 minutes add the leek and potatoes and fry until golden. Season with more salt and pepper if needed. Remove the seeds from the washed chillies, chop them finely, add them to the vegetables with the baked meatballs and stir-fry briefly. Finally add the sweetcorn and the thawed green beans and mix thoroughly. Season with lemon juice and finely chopped thyme and parsley.
Serve the salad with the meatballs warm.
