Got a glut of apples from the garden? This apple chutney is a great way to use them up. We've lifted the flavour with aromatic spices, cranberries and brandy.
Put the cloves, cinnamon and star anise into a sealable spice bag (or wrap them in a piece of muslin and tie it). Set aside.
Heat the oil in a pan and fry the onion and garlic for 3–4 minutes until softened. Add the sugar, mixed spice, ginger, vinegar, washed cranberries, apples cut into cubes, grated zest and squeezed juice of the orange, brandy, the tied spices and 250 ml water.
Bring to the boil, reduce the heat and leave to bubble gently for 1–1.5 hours, stirring occasionally, until the volume has reduced to a third. Leave to cool slightly and fill into sterilised jars. Sterilise using your favourite method – we ran the jars of chutney through one cycle in the dishwasher.
Something extra: Mixed spice can be made in a few minutes. Mix 1 tbsp ground cinnamon, 1 tsp ground coriander, 1/2 tsp grated nutmeg, 1/2 tsp ground ginger, 1/4 tsp ground allspice and 1/4 tsp ground cloves. It will keep for 4 months in a sealed spice jar.
