This streusel-topped batter cake is one of the easiest summer desserts – just whisk the batter, arrange apricot quarters on top and sprinkle everything with cinnamon streusel. You can also use apples, pears or plums from the garden. The baked cake tastes best with a scoop of vanilla ice cream.
Mix the flour, melted butter, eggs, milk, baking powder and sugars in a bowl. Stir with a whisk and add a pinch of salt. Grease the tin well with butter, dust it with all-purpose flour and pour in the cake batter. Arrange quarters of stoned apricots on top, sprinkle with the streusel topping to which we have added a teaspoon of cinnamon, and bake in an oven preheated to 160 °C for 30–35 minutes.

Cut the cooled cake and serve it ideally with vanilla ice cream, caramelised nut brittle and fresh lemon balm, sprinkled with icing sugar and decorated with a lemon balm leaf.
