Baked chicken with a hearty bread, egg and smoked meat stuffing is a comforting classic for the whole family. This recipe serves 6, with 30 minutes of preparation and 100 minutes of baking. The chicken is cut into pieces, seasoned with salt and caraway, then layered with stuffing. It bakes slowly so the meat cooks through and the stuffing stays moist.
Cut the chicken into pieces, place it in a roasting pan, season with salt and sprinkle with caraway seeds.
For the stuffing, cut the bread rolls into cubes, then add chopped parsley and diced smoked meat.
Pour over the beaten eggs and milk. Add the milk gradually according to the consistency of the stuffing; it should not be too runny. Season with salt and pepper to taste.
Spoon the stuffing between the pieces of meat in the roasting pan. Drizzle the chicken with oil and place it in the oven.
Bake gently at 170 °C so the chicken cooks through and the stuffing does not burn. Bake covered with foil for about 60 minutes, then uncover and bake for a further 40 minutes until the chicken is golden brown.
