Basic hummus is rightly one of the most popular dishes in Middle Eastern cuisine. It is very easy to make – besides the chickpeas and tahini paste (which you can also make at home) you only need garlic, lemon, cumin and olive oil, plus salt and pepper to taste. Enjoy it just as it is with pita bread, or serve it with chopped vegetables as an original and healthy snack. It suits vegetarians and vegans alike.
Put the drained chickpeas into a blender and blend them well together with a little of the liquid, the sesame paste, finely chopped garlic, lemon juice, cumin, 50 ml olive oil, ice-cold water, salt and pepper.
In a pan, heat 50 ml of olive oil and gently fry the sliced garlic and the strips of lemon zest. Turn off the heat and add the chopped parsley too.
Serve the hummus in a bowl drizzled with the garlic and lemon oil, together with pita bread or vegetable sticks.
In the serving bowl you can finish the hummus with the olive oil in which we briefly fried the garlic and lemon zest.
Finally, sprinkle with the roughly chopped large-leaf parsley. Serve with pita bread or vegetables cut into sticks.
