Blini (pronounced blee-nee) are traditional Russian buckwheat pancakes. Chef Roman Paulus serves them with smoked salmon, rich sour cream and fresh chives, though they are traditionally eaten with caviar. They also work wonderfully as a sweet breakfast, for example with sour cream and plum jam or a blueberry topping. They are easy to make and you can master them on your first try.
Mix both flours with the crumbled yeast, lukewarm milk, egg and a pinch of salt. Leave the mixture in a warm place to rise, ideally until doubled in volume.
Heat a little vegetable oil in a frying pan and fry small pancakes. Transfer the cooked pancakes to kitchen paper to drain.
Traditionally they are served with caviar, but finish yours with a slice of smoked salmon, a teaspoon of rich sour cream and chopped fresh chives.
For a sweet version, serve the pancakes with sour cream and plum jam or a blueberry topping.
