Braised beetroot is a simple meat-free dish made with fresh beetroot, onion and caraway. The beetroot is first fried with onion and then braised until tender. You can adjust the flavour with vinegar and sugar if you like a more pronounced sweet-and-sour note. The finished dish can be left simply seasoned, or thickened if desired.
