Looking for a really hearty lunch that will satisfy the whole family? These pork cubes with lentils and Hungarian-style sausage are braised with root vegetables, tomatoes and sweet paprika, which gives them a rich, aromatic flavour. Roman Paulus's recipe is easy to follow and tastes best with boiled potatoes or fresh bread.
Season the pork cubes with salt and pepper, dust them with flour and sear them in a hot pan with oil on all sides, then remove them. In the remaining fat, fry the sausage cut into half-moons, add the finely chopped onion and sliced garlic, and after a moment add the root vegetables and celery stalk cut into cubes, the bay leaf and the tomatoes. Let it bubble briefly, sprinkle with paprika, pour in the stock, return the meat to the pan and simmer until almost tender.
Add the unsoaked lentils and cook together until tender.
Garnish the finished dish with a sprig of flat-leaf parsley and serve with boiled potatoes with chives or with bread.
