Potatoes and a fire have always belonged together. While potatoes baked in foil in hot embers are nothing new, cakes baked on a heated stone make a lovely change. The dough is simple – boiled potatoes, egg, coarse flour and a pinch of salt, following chef Roman Paulus's recipe. And if you are not out in the wild, you can bake the cakes on a hot frying pan instead, but you will lose the beautiful smoky aroma, which would be a shame.

Choose the flattest, most even stone you can find and clean it thoroughly. Heat it directly in the fire pit at least 30 minutes before making the dough, so that hot embers are underneath and around it…
