Celeriac is a wonderful ingredient with anti-inflammatory properties and a mildly spicy flavour. In these patties it pairs with smoked cheese and ham to make a satisfying meatless dish. Serve them warm, perhaps with potatoes or a fresh salad.
Finely grate the raw celeriac into a bowl.
Add the coarsely grated cheese and the finely chopped ham.
Then add the remaining ingredients – eggs, flour, breadcrumbs, a chopped piece of leek and, to taste, salt, pepper and chopped parsley.
Mix everything together and shape the mixture into flat patties. If the mixture is too runny, add more flour.
Coat the patties in breadcrumbs.
Fry them in hot oil until golden brown on both sides.
