Chicken breasts topped with ham, canned peaches and melted cheese make a dish that shines at a festive lunch or a family celebration. The meat is quickly seared and then simmered in a delicate sauce, so it stays juicy. The sweet peach, ham and cheese combination gives it an irresistible flavour. Serve it with potato salad or mashed potatoes.
Wash the chicken breasts, remove any membranes and lightly flatten the meat. Season with salt and dust with curry powder.
Heat the oil in a frying pan and sear the meat on both sides over high heat.
Take the meat out, dust the pan juices with plain flour, fry briefly and, stirring constantly, pour in the chicken stock or water.
As soon as the sauce comes to the boil, return the meat to the pan and let it simmer gently for a while.
Warm half a canned peach directly in the sauce with the meat, or in the microwave.
When the meat is done, place a slice of ham and the warmed half peach on top.
Sprinkle everything with grated hard cheese and cover with a lid. As soon as the cheese has melted slightly, serve immediately.
