Chicken (or Rabbit) Baked on Mushrooms
Aromatic baked meat on mushrooms is a simple, fuss-free dish. Layer chicken or rabbit meat on a bed of onion, mushrooms, garlic and herbs, pour over a little stock and bake in the oven until tender and golden. Serve it with potatoes, mashed potatoes, potato gnocchi or dumplings. A sweeter white wine is also a good choice for basting.
