Chicken steak with herb butter is a quick minute dish that will satisfy even a very hungry family. The tender chicken goes beautifully with homemade butter flavoured with thyme and garlic. It is so easy to make that you will manage it with no trouble and cook it yourself next time.
For the herb butter, mash all the listed ingredients together in a bowl with a fork. Transfer the mixture onto cling film, shape it into a roll, wrap it up and put it in the fridge.
Pound the steaks, sprinkle them with pepper and thyme, and rub them with the crushed garlic mixed with the oil.
Sear them over a high heat in a hot pan until golden brown on each side, about 4 minutes. Remove and leave to rest for a moment.
Just before serving, season the steaks lightly with salt and sprinkle with thyme.
Serve them on salad leaves and place a slice of herb butter on the meat for extra flavour. Wild rice works well as a side.
