Chicken strips are first marinated in soy sauce and potato starch, then quickly fried and finally heated through in a chilli sauce with tomato purée. The finished dish is piquant, juicy and goes perfectly with rice, croquettes or chips. For extra flavour, we can add chilli peppers and chopped canned tomatoes.
Wash the chicken and pat it dry. Cut it into strips, mix with the potato starch and soy sauce and leave in the fridge for at least 30 minutes. Peel the onion and cut it into rings.
Heat the oil in a wok and fry the chicken strips quickly on all sides. Remove the meat, add the onion to the pan and fry it quickly as well. Add the tomato purée, salt, pepper and chilli seasoning and stir everything together. Thicken the sauce with plain flour or, better, with potato starch mixed in a little water. Finally return the chicken strips to the sauce and heat through.
Serve with rice, croquettes or chips.
