Chicken with Oat Stuffing and Fried Balls

This recipe takes a little more time and patience, but the result is well worth it. Chicken filled with oat stuffing and served with fried balls makes a hearty and tasty dish that is worth trying.

Method

01.

Pour boiling water over the green tea and soak the oats in cold water. After a while, strain the tea and chop the leaves finely.

Drain the oats and mix them with the chopped tea.

Add the egg and the garlic crushed with salt, season with a pinch of pepper and finally stir in enough breadcrumbs to make a mixture that is not too firm at first.

Fill the salted chicken with part of this mixture, place it in a roasting tin, add a little water and bake it quickly in a hot oven. Then cook it covered at a moderate temperature, adding water as needed and basting with the rendered juices.

Into the remaining oat mixture, stir in enough grated bread roll to make a batter from which we will shape small balls. Fry them in hot oil on all sides like potato croquettes and leave them to drain.

Uncover the chicken and return it to the oven to finish baking until golden brown. Then take the chicken out, dilute the pan juices with 1 tbsp water, stir in the ketchup and warm through. Joint the chicken, put it on a platter, arrange the fried oat balls around it and pour over the pan juices with ketchup.
