Churros are a favourite Spanish treat made from a simple dough of water, butter and flour that is fried until golden. Still warm, they are dusted with sugar and dipped in a rich hot chocolate sauce. Homemade churros are ready in 35 minutes and taste best fresh.
Bring the water and butter to the boil in a small saucepan. Gradually sprinkle in the flour with a pinch of salt and stir constantly until all the ingredients come together and the mixture no longer sticks to the side of the pan. Leave to cool, then gradually beat in the eggs.
Heat the oil in a saucepan or a deeper frying pan. Fill a piping bag with the prepared dough, carefully pipe strips about 7 cm long straight into the oil and fry until golden. Drain the finished churros of excess oil on kitchen paper and sprinkle with icing sugar or vanilla sugar.
Pour the cream into a warmed saucepan and stir. Add the chocolate, broken into small pieces, to the hot cream and stir until it has completely melted. Serve the hot sauce in small bowls and dip the churros into it.
