These little coconut biscuits are crisp, light and filled with a layer of melted chocolate. All you need are egg whites, icing sugar and desiccated coconut, so they are quick to make. The rounds are baked until golden, then sandwiched with chocolate and decorated with coconut.
Whisk the egg whites in a bowl until stiff peaks form, then gently fold in the icing sugar and desiccated coconut. Fill a piping bag with the mixture and pipe rounds about 5 cm in diameter onto a baking tray lined with baking paper. Tap the tray lightly so the rounds sit flat.
Bake in an oven preheated to 150 °C for about 10 minutes until golden. While the biscuits cool, melt the chocolate in a bain-marie. Spread chocolate over the flat side of each biscuit and sandwich it with another one. Place them on baking paper and leave to set. Then dip the biscuits halfway into the chocolate and decorate with coconut.
