A light summer dish that comes together easily. Cod fillets are fried until golden and served with caramelised tomatoes, stewed courgette and potatoes rolled in butter and fresh chives. Preparation takes just 15 minutes and it can be on the table in 45 minutes.
Cut the courgettes into thin strips. Heat a little oil in a frying pan and briefly stew the courgette, season with salt and pepper and set aside.
Put the tomatoes cut into small cubes into the same pan with the balsamic vinegar and sugar and briefly stew.
Pat the fish fillets dry, season with salt and pepper and fry in a second pan in oil until golden.
Boil the small unpeeled potatoes until tender. Melt the butter and season it with salt. Peel the potatoes, dip them in the butter and roll them in finely chopped chives.
Serve the fillets with the chive potatoes and the stewed vegetables.
