Courgette balls are a popular and not too complicated dish for dinner or lunch. Kids especially enjoy them. Serve them with homemade marinara sauce and a suitable side dish.
Preparing the courgette: Remove the core from the courgette and grate it. Preheat the oven to 190 °C. Heat the olive oil in a pan, add the crushed garlic and fry briefly. Then add the grated courgette, season with salt and pepper and cook for about 5 to 7 minutes.
Preparing the ball mixture: Transfer the slightly cooled mixture to a large bowl and add the breadcrumbs, rolled oats, egg, grated cheese, chopped basil and parsley. If the mixture is still a little wet, add more breadcrumbs.
Shaping and baking the balls: Shape the mixture into balls, just like meatballs. Place them on a baking tray lined with baking paper or greased with oil. Bake in the preheated oven for about 20 to 25 minutes.
Preparing the marinara sauce: Meanwhile, make the sauce – heat 1 tbsp oil in a pan and fry the finely chopped onion until golden, then add the crushed garlic. After a while, add the chopped tomatoes, season with salt and spices to taste and simmer until thickened.
