Courgette Fritters with Oat Flakes

Courgette fritters with oat flakes are a tasty option that you can make with sausage or completely meatless. The oat flakes soak up the excess water from the courgette, so the batter is easy to shape. You can fry or bake the fritters and serve them with tartare sauce, garlic dip, or a vegetable or potato side.

Method

Grate the courgette into a bowl, add the grated garlic, marjoram, finely chopped sausage and oat flakes. Season with pepper and salt and mix well. Leave to rest so the oat flakes can absorb the water from the courgette – at least 2 hours, ideally 4.

Stir the mixture again and thicken as needed with flour (about 7 tbsp) or fresh breadcrumbs. Either spoon heaps of the batter into hot oil and flatten them with a spoon into fritters, or shape the fritters with wet hands like meatballs. Fry on both sides until golden brown and drain on kitchen paper.

If you want the fritters meatless, you can of course omit the sausage or replace it with grated cheese, tofu...

Serve with a vegetable or potato side, tartare sauce, garlic or another dip, cucumber salad...

You can also bake them in the oven on a greased baking sheet, turning them during baking.

Eggs are not added to the mixture.
