A thick vegetable soup with a creamy texture that everyone will enjoy. Delicate cauliflower flavour is complemented by fragrant chive dumplings and a pinch of nutmeg. It is ready in 45 minutes and makes a satisfying bowlful.
Heat 2 tbsp of butter in a pot and fry 1 finely chopped onion for 5 minutes. Add about 1 kg of chopped cauliflower, 600 ml of vegetable stock, 400 ml of milk, salt and pepper and cook for 20 minutes until tender.
Mash with a potato masher.
Cut the slices of toast bread into cubes and moisten with milk. Add 1 egg, 2 tbsp of chopped chives or spring onion, a pinch of nutmeg, salt and pepper.
Shape into small dumplings and drop them into the soup to cook.
