A light salad full of fresh vegetables that you can put together in fifteen minutes. Crispy oven-baked Black Forest ham and shavings of Grana Padano turn it into a satisfying dinner or a great lunch to take to work.
Line a baking tray with baking paper and spread the slices of Black Forest ham over it. Cover with another sheet of baking paper and weigh down with a second tray. Bake in an oven preheated to 200 °C for about 10 minutes, then leave to cool.
Cut the peeled cucumbers in half lengthways, scoop out the seeds and slice them into crescents. Cut the cherry tomatoes into smaller pieces. Remove the cores from the peppers and dice them. Halve the olives. Add a handful of rocket to the vegetables, season with salt and pepper, drizzle with the olive oil and the juice of half a lemon and mix thoroughly.
Break the cooled Black Forest ham over the salad and sprinkle with shavings of Grana Padano cheese.
