Czech Cocoa Sheet Cake with Quark Filling

Buchta Fešák is a popular sheet cake that almost everyone remembers from childhood. The sponge is soft and fluffy with a cocoa aroma, and the quark filling blends beautifully into it during baking. With just a few ingredients, it tastes just like grandma used to make.

Method

Grease the tin with fat and dust it with coarse flour.

Put the all-purpose flour, cracked eggs, oil, salt and icing sugar into a bowl and mix.

Add the milk and cocoa and work into a smooth dough with a wooden spoon. Preheat the oven to 170 °C.

For the filling, whisk the vanilla pudding mix, egg and quark together. If the filling is thick, thin it with milk and whisk again.

Pour the dough onto the tin. Stir the quark filling into the dough, ideally with the handle of a wooden spoon; by swirling it, patterns will form in the dough.

Place the cake into the preheated oven and bake for 25 minutes. Check whether it is baked by inserting a skewer, which must come out dry.

07.

Before serving, dust the cake with icing sugar.
