Czech Creamy Dill Sauce

This creamy dill sauce is a classic of Czech cooking. Its base is sour cream thickened with flour and flavoured with fresh dill. It is at its best with homemade bread dumplings and boiled beef, but it is just as good served with an egg. It is quick and easy to make.

Method

01.

Whisk about two thirds of the stated amount of sour cream with the flour. Pour in the salted water and cook. Acidify and sweeten the base of the dill sauce to taste.

Meanwhile, wash the dill, dry it and chop it finely. Whisk the egg yolks into the remaining sour cream.

Stir the dill into the base of the dill sauce and bring to the boil. Then take the sauce off the heat and stir in the egg yolk cream. Do not cook the dill sauce any further.

Serve the creamy dill sauce with bread dumplings and an egg.
