Smažený sýr, nicknamed smažák, is still one of the most popular dishes in Czech pubs and restaurants. They say that preparing this dish is not difficult at all. Simply coat the cheese and fry it quickly, and it is ready in 30 minutes.
Preparing the cheese: Cut the cheese into 1 cm thick slices. Whisk the eggs with a fork and season lightly with salt.
Soaking the cheese: First dip the cheese slices in cold water so the flour sticks well.
Coating: Then coat them in plain flour, whisked eggs and breadcrumbs.
Double coating: To stop the cheese from leaking during frying, dip the coated slices once more in the eggs and breadcrumbs.
Frying: Fry quickly on both sides in hot oil.
