A recipe for classic liver dumplings that you can improve with a little chives or parsley. They are perfect for weddings and birthday parties, but just as good for a Sunday lunch. Liver dumplings turn even the plainest broth into the best soup.
Remove the membranes from the liver and mince it finely or blend it briefly (a few pulses are enough).
Cream the softened butter with the egg and the liver, then season with salt, pepper and garlic. Add finely ground breadcrumbs until the mixture can be shaped into dumplings.
Shape the liver mixture into small dumplings, drop them into boiling soup or broth and cook for about 10 minutes.
You can add finely chopped fresh herbs (chives, parsley) to the dumplings. Serve them as an excellent addition to soups, ideally meat broths.
