These plum-filled dumplings with breadcrumbs are a cheap, meatless dish that anyone can make. The dough needs only flour, water, egg and salt, so if you have plum butter at home the whole meal costs next to nothing. Instead of breadcrumbs you can also use ground poppy seeds, grated gingerbread or nuts. They are ready in no time and taste absolutely fantastic.
Tip the flour onto a work surface, make a well in the centre, crack in the eggs, add 60 ml of water and a pinch of salt and work into a firm dough.
Roll the dough out thinly and cut it into squares about 7 cm across.
Place a small teaspoon of plum butter in the centre of each square, brush the edges with egg white, fold into a rectangle and press firmly together.
Cook the dumplings in boiling, lightly salted water for about 7 minutes, then drain them.
Melt about 30 g of butter in a frying pan and toast the breadcrumbs in it.
Serve the dumplings sprinkled with sugar and toasted breadcrumbs and drizzled with the remaining melted butter.
