Czech Rabbit Patties
Rabbit patties are one of the honest dishes of Czech cooking. The instructions for them were hidden in the textbook Nauka o vaření by Božena Hoferová, approved by the Ministry of Education in 1929. Tender minced rabbit with a bread roll and onion is coated in flour and fried until golden. We have simplified the side dish – the original recommends salad, compote and fine mashed potatoes, while bread, mustard and a gherkin are enough for us.
