A fake marzipan paste that even a bread machine can handle. Icing sugar, milk powder, honey and almond extract make a pliable mixture for covering cakes or modelling figures. With just 25 minutes in total you can get straight to decorating.
Mixing in the bread machine: Sift the weighed sugar and milk into a bowl, mix them together and tip into the bread machine. Add the honey, syrup, extract and water and start the machine on a dough-mixing programme without preheating – every machine is different; on mine it is programme 7 – Dough, which I also use for mixing and proving yeast doughs intended to be baked outside the machine.
Blending the mixture: Let the programme run for about 10 minutes, scraping down the mixture stuck to the sides with a spatula from time to time. After 10 minutes the mixture is blended to a basic consistency; take it out onto the worktop and knead it a little more with wet hands.
Finishing the mixture: Then grease your hands with the shortening and knead it one last time – the fat gives the mixture a little shine, so it does not look so tired and grey :) After that, work with it as in other recipes – colouring it, rolling it out to cover a cake or making decorations and figures.
