Grilled Beef Rolls Stuffed with Asparagus and Bryndza

Treat yourself to a hearty beef dish with a touch of Slovak cuisine. Chef Marcel Ihnačák has created a recipe for beef topside rolls filled with green asparagus, garlic and bryndza. In the video guide you will learn how to clean and blanch asparagus properly, and how to prepare and slice the beef so it does not shrink too much in the pan or on the grill. Finally, you will also make a simple salad from cherry tomatoes, spring onions, chilli and salad mix.

Method

01.

Cut off the woody ends of the asparagus and peel them with a peeler to about halfway up (do not peel the tips). Blanch briefly: cook for 2–3 minutes in boiling salted water.

Cut the beef topside into thin slices and pound them under cling film. Season with salt and pepper.

Finely chop the garlic, sprinkle it over the meat slices and rub it in well. Sprinkle with pieces of fresh thyme and finely chopped deseeded hot chilli. Spread the meat slices with bryndza and place the halved asparagus in the centre. Roll up and secure with toothpicks. Fry the beef rolls in a hot pan with olive oil on all sides until golden. Finally add the butter and drizzle the rolls with lemon juice. Cover the pan with foil and leave to rest for a few minutes.

In a bowl, mix the halved cherry tomatoes, sliced spring onions, deseeded chilli and fresh basil. Carefully cut the larger salad leaves and mix them with the other vegetables. Season with salt and pepper, drizzle with olive oil and lemon juice. Toss gently.

Remove the toothpicks from the rolls and serve with the salad. Finally, you can drizzle the whole dish once more with lemon juice.
