Hanger steak is one of the delicious cuts of beef and needs nothing more than a really simple sear in a pan. We serve it with a fresh blackberry sauce that complements the meat beautifully. The result is an elegant dinner that comes together in 40 minutes.
Preparing the steak: Sear the room-temperature steaks on both sides in a sufficiently hot pan intended for this purpose. A more detailed description of the steak preparation can be found in the recipe mentioned in the note below the recipe.
Resting the meat: Remove the meat from the pan, wrap it in foil and let it rest for the whole time it takes to prepare the sauce.
Making the sauce: Add a small knob of butter, the brown sugar, the blackberries and the thyme to the pan drippings and let them caramelise.
Cooking the sauce: Then pour in the balsamic glaze, stir, deglaze with the wine and add the demi-glace or the beef stock gel cube. Let everything simmer until the blackberries soften. Crush the blackberries and strain everything through a sieve to remove the seeds.
Finishing and serving: Return the sauce to the pan, reduce to the desired consistency, season with salt and pepper and enrich with a knob of cold butter. Season the steaks with salt and pepper and serve them on a warmed plate.
