Seed crackers are a great choice for a healthy snack or party nibble. Based on chef Roman Paulus's recipe, they are made with flax, hemp, pumpkin, sesame or sunflower seeds and rye sourdough. Roll the dough between two sheets of baking paper, cut it and bake. If you like, add chilli, Parmesan or herbs to taste.
Mix the sourdough starter, oil, oats, seeds (crush the larger ones a little), salt and, to taste, dried chilli peppers and pepper in a bowl. Work into a thick, sticky dough and roll it out thinly between two sheets of baking paper (to the width of the seeds). Before baking, cut with a wet knife or pastry wheel. Bake in an oven preheated to 180 °C for about 20 minutes.
Eat the seed crackers on their own as a snack, nibble them while watching your favourite film, or turn them into tasty canapés for a party. For each piece, simply spread a teaspoon of fresh goat's cheese with chopped basil leaves, salt and pepper, and top with half a dried cherry tomato.
