Crispy Hermelín filled with a mushroom stuffing is a great choice when you want to put something a little different on the table, or when the pantry happens to hold no crisps or other salty snacks. Simply fill the cheese, coat it and it's done. Serve it with a smooth beer sauce and boiled potatoes.
Filling: Melt the butter in a frying pan, add the finely chopped onion and finely sliced mushrooms, season with salt and simmer for 5 to 6 minutes. Then stir in the chopped parsley and thicken the mixture with 6 tbsp ground almonds. Leave to cool.
Stuffing and coating: Scoop out the Hermelín halves and fill the pockets with the prepared mixture. Coat the stuffed cheeses in plain flour, beaten egg and breadcrumbs, then fry them on all sides in oil.
Beer sauce: Put the scooped-out cheese centres into the heated butter, stir in the parsley and gradually pour in the beer until the sauce is smooth. Serve with boiled potatoes.
