Crispy homemade potato crisps made from fresh potatoes are a great snack for movie night or as a side dish. We bake them in the oven until golden and season them with ground red paprika, dried garlic and salt. They are served with a delicate mustard dip made from Dijon mustard, lemon juice and sour cream. The result is fragrant, crispy and perfect for dipping.
Peel the potatoes and cut them into thin 3–4 mm rounds with a crinkle cutter. Put them in a bowl of cold water for 30 minutes, then remove them and dry them.
Mix the oil with ground red paprika, dried garlic and salt.
Line a baking tray with baking paper and lightly brush it with the seasoned oil. Preheat the oven to 200 °C.
Place the potatoes close together and bake until crispy for 25–30 minutes. Turn them all over halfway through baking.
Put all the dip ingredients except the sour cream and chopped parsley into a narrow container and blend with a stick blender, slowly moving from the bottom upwards, until a smooth and thick emulsion forms.
Once the sauce has thickened, add the sour cream, parsley and season to taste if needed.
Serve the crisps while still warm, straight from the oven, with the mustard dip, ideally on a plate garnished with chopped parsley, so they are not only tasty but also look beautiful.
