Homemade Bread with Yeast Starter

Crispy homemade bread begins with a well-made yeast starter. We show you how to get the starter going so the dough rises beautifully and the bread turns out fragrant and crisp.

Method

01.

Starter: Crumble the yeast into the warm sweetened milk and leave it to rise.

Dough: When the starter has risen, pour it into the flour mixed with salt, thyme and caraway. Add the warm water, knead the dough and leave it to rise for about an hour.

Shaping: With your hands dipped in cold water, shape the risen dough into two oblong loaves.

Proving: Place the loaves on a baking tray heavily dusted with flour and leave them to rise for 20 minutes.

Oven: Preheat the oven to 250 °C in good time.

Brushing: Just before putting the loaves into the hot oven, brush them with a pastry brush dipped in vinegar water.

07.

Baking: Bake at 250 °C for about 5 minutes, then reduce the temperature to about 170–175 °C and bake for a further 30–45 minutes.

08.

Brushing during baking: During baking, brush the bread with vinegar water several more times.
