Homemade elderflower wine is a refreshing summer drink that is easy to make from black elderflowers. Roman Paulus's recipe is beginner-friendly and perfect for enjoying with friends. You can adjust the flavour to your taste – sweeter, more sour, with cinnamon and cloves or star anise. After a few days of fermentation, you get a drink you will happily return to every year.
Scald a jar in boiling water, trim the ends of the lemon and cut it into rounds.
Put all the ingredients into a large jar, stir, cover with a cloth and leave in a warm place (even in the sun) to ferment for 5–8 days. Stir the lemonade for the first two days.
Then strain and serve. Put ice, lemon slices and a few blossoms for garnish into a glass and pour over the ready, ideally chilled, elderflower wine.
