Homemade Hamburger Buns

A great burger relies not only on quality meat but also on a fresh, fluffy bun. With this recipe you can bake homemade hamburger buns that, topped with sesame seeds, taste like a classic of American cooking. The recipe guides you through making the yeast starter, rising the dough properly and baking the buns until crisp. They work for large burgers as well as smaller sliders for a party.

Method

Mix the yeast with a little sugar and warm milk, and leave it in a warm place until the starter rises. From the flour, salt, remaining sugar, butter, 1 egg, the rest of the milk and the starter, work into a smooth dough, ideally in a stand mixer. Cover it with a tea towel or cling film and leave it in a warm place to rise until it doubles in volume.

Turn the risen dough out onto a floured work surface, knead it by hand and divide it into pieces weighing 120 g. Shape each piece into a smooth ball, place them on a baking tray lined with baking paper, cover with a tea towel and leave to rise again until they double in volume. Brush the risen buns with beaten egg and sprinkle with sesame seeds. Bake in an oven preheated to 190 °C for about 13 minutes until golden brown. After removing from the oven, leave them to cool for 15–20 minutes before cutting.
