Indian red lentil dhal is a fragrant meat-free dish that is on the table in half an hour. The lentils simmer with onion, ginger and a blend of curry powder, cumin and garam masala until lovely and soft. Serve it with rice, scattered with fresh coriander or parsley and spiced with sambal oelek to taste.
Finely chop the onions and gently fry them in the oil over a low heat.
Towards the end add the crushed garlic, garam masala, cumin, curry powder and turmeric, stir and pour in the stock. Add the lentils, finely grated ginger, sambal oelek and the tomatoes or tomato purée, and simmer for about 15 minutes, or even longer, until the lentils are soft.
You can sprinkle the dish with chopped coriander or parsley and serve it with rice.
If you are serving the dish to children as well, prepare it without the sambal oelek. Or, once cooked, take out a portion for the children and stir the sambal oelek into the rest and reheat. ---- Recipe from the book Vegetarian Cookbook by Inga-Britta Sundqvist.
