Lindström patties are named after a Swedish factory owner who spent part of his life in St Petersburg. They are served as part of the festive Swedish smörgåsbord. Thanks to the capers and beetroot the recipe is a little unusual, but it is well worth trying.
Mix the minced beef with the egg yolks, Worcestershire sauce and finely chopped onion, then season with salt and pepper. Work in the capers, grated beetroot and chopped chives. If the mixture is too thick, stir in a little cream.
Shape the mixture into patties and fry them in a pan in the heated mixture of butter and oil for 3 minutes on each side. If you like your meat well done, put the patties in the oven for 15 minutes.
