Linzer cookies scented with vanilla and lemon zest are one of the unmistakable symbols of Christmas. The shortcrust dough is easy to make and is left to rest in the cold until the next day. Once baked, the shapes are simply sandwiched together with jam for a batch of festive biscuits.
Line a baking sheet with baking parchment.
Pile the flour on a work surface, grate the butter over it and add the sugar, egg yolks, grated lemon zest and vanilla sugar.
Mix everything well and work into a smooth dough. Leave the finished dough to rest in the cold until the next day.
Roll the dough out into a 3 mm thick sheet and cut out any shapes you like, placing them on the baking sheet. Bake in a preheated oven at 180-190 °C until golden brown.
Once cooled, sandwich the baked pieces together with jam.
