Lutenice is a hearty cold spread made from cooked potatoes, perfect when you have leftovers from lunch. Grate the potatoes finely and mix them with garlic, onion, mayonnaise, tomato purée and spices. The result is creamy and slightly spicy, and it tastes great on fried bread or open sandwiches. It takes just twenty minutes and needs no cooking at all.
Grate the cooked, cooled and peeled potatoes (leftovers from lunch work perfectly) finely.
Peel the garlic and crush it with salt. Peel the onion and chop it very finely.
Mix the potatoes with all the remaining ingredients, then season with salt and pepper.
Serve on fried bread, toasted toast or as a spread on open sandwiches.
