No-Bake Apple Cake

If you have a glut of apples at home, this no-bake apple cake is the perfect solution. Apple purée, sponge biscuits and custard powder come together in a moist dessert that needs no baking at all. Simply chill it in the fridge and finish it with whipped cream, sugar and cocoa.

Method

01.

Clean, peel and grate the apples on a fine grater. Put the grated apples in a saucepan, pour in 1/2 l of water and add the lemon juice, then simmer together to make a purée. Whisk the custard powder into the remaining 1/4 l of water and stir it into the apple purée, then cook for a further 10 minutes.

Line the base of a cake tin with sponge biscuits, pour over part of the apple purée and smooth it out, add another layer of biscuits and pour over more purée. Repeat until the tin is full, finishing with a layer of apple purée.

Put the no-bake apple cake in the fridge and leave it to chill for about 2 - 3 hours.

Cut the chilled, sufficiently firm apple cake into slices. Before serving, decorate with whipped cream and sprinkle with sugar and cocoa.
