Kucmoch is a simple old Bohemian dish made from thin slices of potato baked until golden, rubbed with garlic and salt, then finished with a cream and egg mixture flavoured with marjoram. The result is a fragrant side dish that goes well with meat or makes a light lunch. Crushing the garlic is easy – all you need is a peeled clove, a board and a knife.
Baking the potatoes: Cut the peeled potatoes into thin slices and spread them in a roasting tin or on a baking tray greased with lard. Bake until golden – do not add salt.
Rubbing with garlic: Then rub the potatoes with garlic crushed with salt.
Preparing the mixture and finishing the bake: Stir two eggs and the marjoram into the cream or milk, pour over the potatoes in the tin and bake until done.
