A hearty one-pan dinner: chicken roasted on a bed of sauerkraut with caraway and bacon, surrounded by soft dumplings made from breadcrumbs and potato. Everything goes into a single roasting pan, so there is hardly any washing up afterwards. The recipe serves four.
Season the chicken with salt and seasoning. Cut the bacon into small cubes, push them into the chicken and close the opening with a skewer.
Take a wider roasting pan, spread the sauerkraut in it together with its brine and sprinkle with sugar.
Add the finely chopped onion and place the chicken on top.
Put 3 slices of butter on the chicken and add a little water.
Cover the pan and roast for 30 minutes.
Meanwhile, mix the dumpling dough. Peel, wash and finely grate the potato. Add the remaining ingredients and work them into a dough. Shape it into balls and, after 30 minutes of roasting, place them around the chicken on the cabbage.
Cover the pan and roast for a further 25–30 minutes, depending on the size of the chicken. Then uncover and bake until crisp.
